Peter Yuen

Peter Yuen runs La Patisserie P in Chicago, the viennoiserie-focused bakery he opened with his wife in 2004. After a decade apprenticing under master bakers in Hong Kong, he graduated from The French Pastry School in 2000 and developed his own lamination method. He now serves as the official viennoiserie trainer for the German National Baking Academy.
