Jean-Marie Lanio
Jean-Marie Lanio is a French baking consultant and co-author of Le Grand Livre de la Boulangerie and Le Grand Livre de la Viennoiserie, landmark references in their field. After years teaching at the EHL in Lausanne, he relocated to Asia where he leads master classes and directs the Bali Baking Institute.
